'T' caters to the crowd's taste

When Trent "T" Auxier isn't teaching special education at Elkhorn Middle School, he is owner and manager of T's Grab N Go Catering, a state-certified and insured mobile kitchen.

And he's no stranger to hard work.

"My wife tells me I over-commit myself, but that's just the way I am," he said. "I try to please everybody."
If he doesn't have the food you want, he'll find a way to get it, he said.

His extensive menu ranges from ribeye and pork chops to soft pretzels and cotton candy.

Auxier has often met requests for buffet-style catering as well as wedding receptions, festivals and sporting events.

"When people ask us what we serve, we just ask them what they want," he said. "We can do just about anything."

His most recent charge was providing concessions for guests and participants at the Frankfort Convention Center for last week's state wrestling tournament.

An estimated 10,000 attended, and Auxier fed everyone who was hungry.

He doesn't do it all by himself, though. Several others man the concessions.

Each year, Auxier sponsors a group of high school students to work with his staff. They are paid for their work (at least minimum wage) and often use the money to fund school trips and activities, he said.

This year parents and students from the Grant and Powell County volleyball teams, members of the Franklin County Retired Teachers Association and others are on board.

What the kids learn " not what they earn - is what Auxier values most, he said.

"We want them to try to understand what working is like and we offer them that opportunity," he said.

But as a teacher, Auxier said that school comes first.

"My parents were both teachers and instilled (in me) the importance of school at a very young age.

"If kids try to come in here before 3 o'clock, I turn them away. I watch their grades, too. If they're not making at least a C, I won't let them work."

Auxier cares a lot about kids and "listens to what they have to say," he said.

Some of his students even designed the logo for the business, which features a flame and large "T."
He values his community too, he said.

This year T's Grab N Go Catering became an official member of the Frankfort Area Chamber of Commerce.

This membership "makes us more viable, more legitimate," he said. It's also a way of "getting back into the community a little bit."

The next big event for Auxier and his crew is the 127 Yard Sale that runs Aug. 6-9.
